Leaving behind the wilds of Dublin with its fabulous pub grub, political marches (good on you people), self deprecating humour………image………and incredible cultural Celtic legacies………imageimage……….and heading off across Ireland’s heart to get to the Wild West Atlantic Coast, the Irish countryside had much to offer – from Guinness on tap in tiny pubs with peat moss fires, scones and cream…..image……..to boxty breakfasts in 18th century manor houses with manicured gardens………imageimage…….to animals made from willow………image……….stone walls, green fields….image……..and thatched cottages.imageThe purpose for this cross country sojourn was to meet up with a fellow called Denis Quinn who runs Wild Atlantic Tours along the shores of County Mayo which includes food foraging. Having seen the bounties of the wayside along many of the side roads enroute to the West coast………image
